Beating the Summer Heat: Go-To Herbal Recipes for Cooling Down

Hey friends, summer has a way of sneaking up on you, doesn’t it? One minute you’re enjoying warm evenings, and the next the air feels thick and sticky, leaving you drained and craving anything that brings a bit of relief. Over the years, I’ve turned to herbs not just because they taste amazing, but because they genuinely help me feel more balanced when the temperatures climb. I’ve drawn inspiration from some wonderful resources at the Herbal Academy, adapting their ideas into simple, everyday treats that I actually make at home.

These aren’t fancy or complicated—just honest, cooling recipes that bring joy and a little calm to hot days.

Why Herbs for Summer Cooling?

Certain herbs have a natural ability to refresh us from the inside out. Mint and lemon balm feel like a breeze on a hot afternoon, while hibiscus and rose add that tart, floral lift that quenches more than plain water ever could. I love how these plants work with the season—cooling, hydrating, and often uplifting when the heat makes everything feel heavier. Here are a few personal favorites I keep coming back to.

1. Hibiscus Herbal Cooler – My Everyday Thirst Quencher

This vibrant red tea has become my summer staple. It’s sour and slightly astringent in the best way, perfect for humid days when I need something drying and refreshing. I often brew a big batch on the weekend and keep it in the fridge.

Ingredients (for about ½ gallon):

  • ¼ cup dried hibiscus flowers

  • ¼ cup dried chamomile

  • 2 tablespoons dried rosehips

  • 1 tablespoon cinnamon chips

  • Honey to taste (optional)

  • Water

How I Make It: I toss the herbs into a half-gallon jar, pour boiling water over them, and let it steep for 30 minutes (or sun-tea it for a few hours on a bright day). Strain, sweeten if I feel like it, and chill. Sip it straight or over ice with a lemon slice. It’s tart, floral, and instantly cooling—exactly what I reach for after being outside.

2. Elderflower Lemon Balm ‘Ade’ – Gentle & Uplifting

When I want something lighter and more floral, this quick “ade” hits the spot. Elderflower moves heat out gently, and lemon balm adds that bright, calming citrus note.

Ingredients (per serving):

  • 2 teaspoons dried elderflowers (or a few fresh umbels)

  • 1 teaspoon dried lemon balm (or 2 teaspoons fresh)

  • 1 cup water

  • Honey to taste

  • Lemon or lime slices (optional)

How I Make It: Steep the herbs in hot water for 10-15 minutes, strain, sweeten lightly, and chill. I sometimes add sparkling water for a fizzy version. It’s the kind of drink that makes me slow down and actually enjoy the moment instead of just enduring the heat.

3. Lemon Balm & Mint Cool-Down Pops

These popsicles are pure summer magic on a stick. Lemon balm calms and cools, while mint adds that crisp kick. I make them when the forecast shows triple digits.

Ingredients:

  • ½ cup fresh lemon balm aerial parts

  • ½ cup fresh mint leaves

  • 4 cups water

  • 1–2 tablespoons raw honey or maple syrup

  • Juice of ½ lime (optional)

  • Thin lime slices (optional)

How I Make It: Steep the herbs in boiling water for 15–20 minutes, strain, sweeten, add lime if using, pour into molds, and freeze for 4–6 hours. They’re lightly sweet, beautifully green, and disappear fast in my house. Perfect for afternoons when everyone needs a reset.

4. Herbal Summer Slushie – Fun & Nostalgic

Remember those bright slushies from childhood? This version is infinitely better—real lemon, mint, and lavender. It feels indulgent but leaves me hydrated and clear-headed.

Ingredients:

  • 3 lemon slices

  • Handful of fresh mint leaves

  • 1 tablespoon dried lavender buds

  • 3 cups water

  • Sweetener of choice (about 1 heaping tablespoon)

  • Crushed ice (2:1 ratio with liquid)

How I Make It: Steep the lemon, mint, and lavender in hot water for 15 minutes. Cool completely, sweeten, then blend with crushed ice. The floral-minty-lemon combo is so refreshing—it’s my go-to when I want something playful.

5. Berry Herbal Nice Creams – Creamy Without the Guilt

When I crave something richer, these banana-based “nice creams” deliver. They’re naturally sweet, packed with fruit, and the herbs make them feel special.

My favorites:

  • Raspberry-Mint: Tart raspberries + fresh mint = instant cool-down.

  • Cherry-Vanilla-Rose: Pink, romantic, and heart-soothing.

  • Lavender-Strawberry: Calming and nostalgic.

  • Blueberry-Basil: Bold, antioxidant-rich, with a surprising herbal twist.

Basic Method (1-2 servings): Blend ½ cup plant milk, 1 cup frozen berries, ½–¾ cup frozen banana chunks, a splash of vanilla, and the featured herb (e.g., 3 tbsp fresh mint or 1 tbsp lavender buds). Add more milk if needed for creaminess. Eat right away for the best texture. These have saved many hot afternoons when cooking felt impossible.

Bright sunlight streams through green trees in a park, casting colorful rays on the grass. A bench sits in the tranquil setting.

Summer doesn’t have to feel overwhelming. These simple herbal recipes help me stay present, nourished, and a little more comfortable in my own skin. They’re flexible too—swap herbs based on what’s growing in the garden or what you have on hand.

If you try any of these, I’d love to hear how they land for you. What’s your favorite way to use cooling herbs in the heat? Here’s to slower, cooler, more flavorful summer days. 🌿
