Ingredients:

4 cups fresh figs, washed and diced

2 cups water

2 cups cane sugar

2 Tbsp vanilla extract

Instructions:

  1. Combine all the ingredients in a saucepan

  2. Let sit on medium heat until it comes to a boil and all the sugar has melted

  3. Give it a stir, and press / squish the figs to extract as much as you can

  4. Remove from heat and let cool for 10 minutes

  5. Strain out figs through a metal sieve to only get the liquid

  6. Place in a jar and store in the fridge

If you enjoy a thicker syrup, you can return the strained syrup to the saucepan over medium heat and add 2-4 Tbsp of corn or potato starch, stirring it in for about 5 minutes before allowing to cool again and then jarring and storing in the fridge.

Will be good in the fridge for roughly 1 month.

Benefits: Fig syrup is rich in antioxidants, vitamins and minerals such as potassium, calcium, magnesium, and iron, offering numerous health benefits such as improved digestion, enhanced immune function, and support for bone health.
